Pizza Pizza

To start my series on changing your eating and exercising habits I will show you what I had to eat last night. It was amazing, delicious, and very satisfying.  I had PIZZA. 

This pizza had less than 4 grams of carbs and tasted amazing.  This isn’t a diet, this is my lifestyle.  Here is the recipe (hat tip my beautiful wife).

Need – 5 cups of raw cauliflower,

Process in food processor – create a cauliflower rice consistency.

3 cups of water to boil, when boiling dump pureed cauliflower into pot for 4-6 minutes, then drain.  This creates a “paste”

***Put paste on a clean kitchen towel to drain it, (push the water out).  Fold towel over paste to “push the water out”  Very important step***

Put paste in bowl, mix with one egg and ¼ cup of shredded mozzarella, pepper, salt, oregano leaf (crushed, key ingredient to taste like pizza),  mix up with hands,

Take a baking sheet with parchment paper, spray with olive oil pam (non stick), spread paste into pizza shape (approx. ¼ to 1/3  inch).

Put in oven and bake at 350 degrees for 30 minutes or until desired consistency ,  take it out and brush with olive oil.  Add your sauce and toppings and place back in oven on 350 degrees for another 8-10 minutes until cheese is bubbling.  Brush with small amount of olive oil after cooking

The crust is not super crispy but the flavor is amazing.  It tastes like pizza (no cauliflower taste, I hate cauliflower) and does not leave you feeling full or bloated.

I added meatballs, salami, pepperoni, and jalapenos.  My wife did the same with bell peppers.  the best part is that it is part of a healthy lifestyle.  My beautiful wife developed this from other recipes and through trial and error.  We have added it to our weekly meal plan.  You can also use variants of the crust (sans oregano) to make grilled cheese sandwiches, and nachos that are all under 4 grams of carbs.
